Light orange gelatin with mandarin oranges, pineapple, and fluffy creamy topping. Festive spring dessert.

# What You'll Need:

→ Gelatin Base

01 - 2 (3 oz) boxes orange-flavored gelatin
02 - 2 cups boiling water
03 - 1 cup cold water

→ Fruit & Mix-ins

04 - 1 (15 oz) can mandarin oranges, drained
05 - 1 cup crushed pineapple, drained

→ Creamy Layer

06 - 1 cup sour cream
07 - 1 cup mini marshmallows
08 - 1 cup whipped topping

# How to Make:

01 - Pour orange gelatin powder into a large mixing bowl. Add 2 cups boiling water and whisk continuously until crystals completely dissolve. Stir in 1 cup cold water and let mixture cool for 10 minutes.
02 - Gently fold drained mandarin oranges and crushed pineapple into cooled gelatin mixture, taking care not to break up fruit segments.
03 - Transfer mixture to a 9x13-inch glass dish or decorative serving bowl. Refrigerate for minimum 2 hours until completely set and firm to the touch.
04 - In a separate bowl, combine sour cream, mini marshmallows, and whipped topping. Fold together with spatula until just blended and uniform in texture.
05 - Once gelatin base is fully set, spread creamy topping evenly across surface using back of spoon or offset spatula.
06 - Return dish to refrigerator for at least 1 additional hour to allow layers to set together. Garnish with extra mandarin orange segments or orange zest if desired before serving.

# Expert Suggestions:

01 -
  • Its that nostalgic dish that somehow still feels modern enough for todays potlucks and holiday tables
  • The creamy topping cuts through the sweet gelatin just enough to make it truly addictive
02 -
  • Never add fruit to hot gelatin or itll start breaking down and becoming mushy
  • Let the creamy topping come to room temperature for a few minutes before spreading to avoid tearing the set gelatin underneath
03 -
  • Use a rubber spatula to spread the creamy layer so you dont accidentally pull up bits of the set gelatin
  • If the gelatin feels too soft after chilling, it probably needed more time in the fridge or the water ratio was slightly off
