- Combine ground chicken, chopped onion, garlic, soy sauce, grated ginger, salt, and pepper in a large bowl. Mix until all ingredients are evenly distributed throughout the meat.
- Divide the chicken mixture into 4 equal portions. Shape each portion into a uniform patty, pressing gently to create compact but not overly dense burgers.
- Heat grill or grill pan to medium temperature. Lightly brush the cooking surface with olive oil to prevent sticking.
- Place patties on the preheated grill. Cook for 5–6 minutes on each side until fully cooked with clear juices and internal temperature reaches 165°F. Add cheese slices during the final minute of cooking and cover to melt if desired.
- While patties cook, place pineapple rings on the grill. Grill for 2 minutes per side until light caramelization marks appear and fruit is heated through.
- Place burger buns cut-side down on the grill for 1–2 minutes until golden brown and lightly crisp.
- Spread barbecue sauce on the bottom bun. Layer lettuce, tomato slices, cooked chicken patty, grilled pineapple ring, and red onion. Top with the upper bun and serve immediately.
